Join in a discovery of the cultural roots of Mexican cuisine as Marco Polo Hernandez Cuevas, Professor of Afro-Latina Studies at North Carolina Central University, speaks on the transatlantic trek of rice and the role it plays in New World cooking. Hernandez-Cuevas is the author of The Afro-Mexican Ancestors and the Nation They Constructed, as well as Africa in Mexico: a Repudiated Heritage.
